Sandor Katz’s Fermentation Journeys: Recipes, Techniques & Traditions from around the World

by Sandor Ellix Katz, 352 pages, 7x10, hardcover. A balm for wanderlust at a time when travel seems risky (pandemic) and indulgent (burning fossil fuels for pleasure). I am delighted to let fermentation’s darling do the globe-trotting for me. With joy, curiosity and rigor, Katz reports back from kitchens near and far, where local guides are friends and comrades in funky flavor exploration. Through stories, conversations, photos and recipes, he expands on his other books in directions that are not redundant. There is always more to learn and share. Katz treads lightly, proceeding with all the humility a cult-celeb could reasonably muster. He names the pitfalls of cultural appropriation, acknowledges his privilege and knows he’ll fall short—one gets the feeling he’s doing his best. Some recipes I’ll try, many I won’t, but I’m having fun imagining it all. -EB
