For generations every European backyard had a Boskoop. Even today, chefs in Europe know Boskoop, which cooks and bakes beautifully. Quickly reduces to a nice sauce: yellow, soft and medium tart. Big blocky somewhat ribbed fruit largely patched with green and russet, sometimes with a reddish blush. Grower David Maxwell of Nova Scotia calls it “an absolutely outstanding apple…seemingly resistant to everything. I didn’t spray them at all and they are absolutely clean. The taste is equally outstanding.” Rather tart right off the tree. In storage the acidity softens and it becomes quite tasty fresh. Keeps well. Triploid: will not pollinate other apples. Blooms early. Z4.
