Also known as Jerusalem Artichoke. Originally brought to Maine in the 1970s from Binghamton, NY, by Fedco’s founder’s father, and Eco-grown ever since in Canaan, Maine. This large white-fleshed, cream-skinned variety has been likened to the well-known Clearwater. Canaan tends to be knobbier, but is just as crisp and tasty.
